Here is another quick healthy lunch, super yummy and at just about 300 calories, I have no doubt that it will keep me full until dinner time.
1/4 c. cooked/seasoned ground beef (or turkey). I have a makeshift homemade taco seasoning recipe that I use but I really don’t ever measure so I can’t post that recipe-I literally just throw things in until it tastes right.
1/2 c. homemade broccoli/cauliflower rice (so easy-see below)
1/4 of a small avacado
Lots of yummy homemade salsa
dollop of non-fat greek yogurt
Served with 1/2 sprouted grain tortilla strips that I cut and put in my air fryer for a few minutes to crisp up.
Combine, top with LOTS of salsa and ENJOY. Seriously, so easy!!
Homemade broccoli/cauliflower rice
I feel silly even writing a “recipe” for this but honestly when I first started doing this, I had to look up a recipe. For the quickest/easiest way to make veggie rice, I simple steam or microwave frozen veggies. Dump into my food processor and pulse 2-4 times and viola-you have veggie rice! I season with salt and pepper to make it have some good flavor.
