Brown Rice Spring Roll Wrap

This was one of the best lunches I’ve had in a while. I STRUGGLE with lunch at my house. First of all, I’m always starving by 10:30am so I never know what in the heck to eat. I need some quick to make, easy to eat, healthy but also easy on my stomach. I’ve been trying to be more conscious of eating a more plant based diet and figure lunch is an easy place to pack in more veggies. SO, I found a recipe for spring rolls and decided to make it my own!

First of all, I ordered all of this from @walmart using their grocery app and had it delivered straight to my doorstep (THANK YOU grocery delivery!).

Ingredients

Star Anise Vietnamese Brown Rice Spring roll wrapper (followed the directions on the back of the package on how to prepare)

1/4 avacado

1/4 thinly sliced English cucumber

1/8 c. prepared jasmine rice

crushed cashews

hot sauce

I spread avocado on the spring roll wrapper and topped it rice and cucumber. Then I rolled it up (using the instructions on the back of the package-this is tricky so mine looked like a mess!) and dipped it in the hot sauce. Seriously YUM! Now that I have these wrappers on hand, I’m going to come up with more variations of this so stay tuned 🙂
